
It’s been an incredibly fun year and I want to thank each and every one of you for sharing this adventure with me and for your kind and continued support.
What can you expect from Inspired Edibles in year two? Well, in addition to more junk food (ha!), a detailed index is in the works along with proper recipe printing capacity (yay!). As always, I remain open to your comments and feedback.
Truffles are made from a ganache base – a simple combination of heated cream and chocolate (which I have further simplified).
For the Basic Ganache
Chopped dried fruit (cranberry, papaya, apricot, etc.)
Spread desired toppings out on a flat dish and simply roll chocolate truffles in mixture to coat, pressing into chocolate gently if necessary for fruit, etc.
Place truffles in a decorative miniature cup (you can find candy/chocolate cups at kitchen stores and bulk stores) and place truffles in a small box if you wish to present as a gift.
This recipe will make about 16-20 truffles.

Say no more than dark chocolate. If I get a box of chocolate that has dark and milk, I give away or throw away the milk chocolate. I had a chocolate store and by far dark chocolate is everyones favorites. Wonderful post.

So round? hmmm… no idea. Is it possible your ganache is not quite firm enough, thus the flying saucers ;-) (love the visuals on that one!)
I just love the subtle taste of the salt and it has a long history as a natural preservative but as for improving the quality of the ganache – I’m not certain though I have read that some chefs swear by it –

Dark chocolate is relatively low in sugar and high in antioxidants – I eat it almost every day – those French philosophers are so smart ;-)

Happy Birthday Inspired Edibles – I didn’t realise it was so young… I’d always thought it was much older than mine! I love truffles Kelly – how on earth do you get them so round? When I try to roll out balls they always end up looking like little flying saucer things, no matter what I do :(
What does the salt in the ganache do? Does it just serve as an extra way to lift out the flavour, or does it do something special to the ganache? My ganache seems to have super-liquification properties and takes about 2 days to set properly when I make it, so I’m always after good tips on how to improve the technique :)

I have recently been offered a book where in the foreward a famous French philosopher and ex-minister says he used to eat his weight in pure chocolate every year until he was 50 and started to gain weight. (Bu the way he has always been very slim and still is). Can you imagine??? In France many people eat tons of chocolate and now it is rare I think, but one generation ago children were given for tea a piece of baguette and a bit of chocolate to eat in the middle of the sandwich. Now they usually eat nutella and I’m sure it’s less healthy ;-) Personally I’m addicted to dark chocolate.
