What do you mean you’ve never had a beetroot latte?

Beautifully vibrant, comforting and immune supportive, this tasty little number will wrap you in warmth and chase away the winter blues (and possibly the kids too).
Such a nice way to unravel from the holidays and add a little variety to the usual.
A touch of sweet from the berries cozies up nice with the earthy beet and that telltale zing of fresh ging… I just luv it. It adds delicious flavor and brings both anti-inflammatory and anti-nausea properties (helpful for upset tummies; motion sickness; morning sickness, menstrual cramps, etc). Neither masks the flavor of beet though, for good or bad (depending on your view), it shines through.
I’ve been enjoying this lil charmer in the afternoons but you could start your day with it too, as you like.

- 1 medium fresh red beet (about 6oz/180g)
- ¾ cup fresh raspberries (about 3oz/90g)
- 1 Tbsp grated ginger, or to taste
- 1 tsp maple syrup or honey
- ½ tsp (ish) cinnamon
- 1 + ½ cups almond milk (I like Califia unsweetened)
- At least 1 cup reserved beet water (from boiling)
- Trim ends off beet, slice in half and boil, skin on, in submerged water for about 20 minutes or until the beet is relatively tender when pricked with a fork. Tip: I usually boil 3 beets at a time and store in fridge for later use.
- Once beet is cooked, drain and reserve water (set aside). Allow the beet to cool sufficiently to handle and remove skin (I do this mostly with my fingers).
- In a blender or food processor, combine: cooked beet, raspberries, grated ginger, maple syrup or honey, cinnamon and 1 cup of reserved beetroot water (the water should still be warm or just reheat before adding).
- Blend until nice and smooth. Taste and adjust flavor as desired. The mixture will look like raspberry jam only more dilute. You can add more water to achieve an even more dilute consistency as preferred.
- Meanwhile, bring milk to a simmer in a small pot on stove (avoiding an active boil) and then carefully transfer milk to a frother and froth.
- Divide beetroot mixture between 2 cups leaving enough room for added milk/froth.
- Simply top with foam or mix in some of the hot milk first with a spoon (will create a pretty pink color) and then top with foam -- using as much or as little as you like in both cases.
- You can sprinkle foam topping with additional cinnamon or nutmeg/cardamom, etc. as desired.
- Enjoy.

Fiber! this latte is fiber rich which is groovy but go easy at first to acclimatize and ease possible gastric distress.

Well, this is different. Never thought I would see a beetroot latte. :) Not being a beet fan I was skeptical at first, but once I saw the raspberry and ginger I started having second thoughts. The color is beautiful and the flavors sound pretty awesome!

Your photographs are so beautiful, I’m sure even the biggest beetroot haters would love to taste it! I do like beetroots, but only in certain combinations (perfect with pickled herrings!!!!) and I would be very curious to learn how it tastes with raspberry… Very creative!

Such a beautiful colour. Although I am a rather adventurous eater, I am not sure about a beetroot latte! Having said that, the colour is enough to compel me to try it.

To the two of you who clicked on this post… thank you (oh that gave me a huge huge laugh)
in part because Phil was right behind me, and casually looked over my shoulder – BEET LATTE???? uuuuuugh… (or some other sound pretty much impossible to translate in writing)
ANYWAY, what can one say, right? Beets are not the most popular veggie in the universe – but you made a case for this latte beautifully. IN fact, the picture is so gorgeous, with a yin and yang quality… I would love to sip some!

hahaha!! that’s pretty much how my son reacted too… he’s at home for another week before heading back to school so I asked him to have a look at the photos (no title inserted yet) – that part went fine but then he takes a step back and says, wait, what is that?
